  • Approximately 28–30 plain saltine crackers roughly one sleeve, broken into coarse pieces
  • 3 firm yet ripe tomatoes chopped and thoroughly drained
  • 2 stalks of green onion finely sliced
  • ½ cup of full-fat mayonnaise with extra as needed for desired consistency
  • 3 hard-boiled eggs shelled and diced
  • Freshly ground black pepper and kosher salt to your taste
  • Optional: freshly chopped parsley for garnish

Instructions

  • Begin by preparing your components. Dice the tomatoes and allow them to rest on a layer of paper towels to wick away moisture. Peel and chop the boiled eggs, then thinly slice the green onions.
  • In a spacious mixing bowl, combine the drained tomato pieces, chopped eggs, and sliced green onions. Stir gently to distribute evenly.
  • Add the mayonnaise to the bowl, folding it into the mixture until the ingredients are uniformly coated. Season with salt and freshly ground pepper to suit your preference.
  • Right before serving, incorporate the crushed crackers. Fold them in delicately to preserve some crunch and avoid excessive softening.
