Ingredients

Cake Batter

  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3 eggs lightly beaten
  • 1/2 cup butter 1 stick, melted
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 2 medium Granny Smith apples peeled, cored, and diced finely

Topping

  • 3/4 cup packed light brown sugar
  • 1 cup chopped pecans
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1/2 cup butter 1 stick, melted
  • 1/2 teaspoon cinnamon

Glaze

  • 2 tablespoons apple cider
  • 2 tablespoons butter
  • 2/3 cup packed light brown sugar

Instructions

  • Preheat the oven to 350°F and lightly grease a 9x13-inch baking pan.
  • In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, sugar, and cinnamon. Whisk to blend thoroughly.
  • Stir in the melted butter, sour cream, eggs, and vanilla extract until the batter is smooth. Pour the batter into the prepared baking pan and spread evenly.
  • Scatter the diced apples evenly across the top of the batter.
  • For the topping, mix the flour, brown sugar, pecans, cinnamon, salt, and melted butter in a medium bowl until well combined. Sprinkle this mixture evenly over the apples.
  • Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  • While the cake bakes, prepare the glaze by combining the brown sugar, apple cider, and butter in a small saucepan over medium heat. Stir until the sugar dissolves and the butter melts.
  • Drizzle the warm glaze over the cake once baked. Serve warm or at room temperature.
