Ingredients

Fritter Mixture

  • 16 oz shredded cabbage about 7 cups, packed
  • 3 large eggs
  • 2 medium carrots grated
  • 2 –3 scallions thinly sliced (or 1 small onion)
  • 2 cloves garlic minced
  • 4 –5 tbsp flour substitute gluten-free or grain-free as desired

Seasonings

  • 1 tsp sea salt
  • ½ tsp black pepper ground
  • ½ tsp paprika or smoked paprika
  • ½ tsp ground coriander optional
  • 3 –4 tbsp cooking fat for frying ghee, avocado oil, or grapeseed oil

Instructions

Prepare Ingredients:

  • Shred the cabbage using a mandoline for uniform thin slices (approximately 1/3 of a medium head of cabbage). Grate the carrots and finely mince the garlic. If using scallions, thinly slice them; otherwise, use a regular onion.

Combine Ingredients:

  • In a large mixing bowl, add the cabbage, carrots, scallions, garlic, eggs, and flour. Sprinkle in the salt, pepper, paprika, and coriander. Toss the ingredients gently with your hands until everything is evenly combined, taking care not to press too hard, as this may release excess moisture from the cabbage.

Form and Fry the Fritters:

  • Preheat a non-stick skillet over medium-low heat for 3 minutes. Add your choice of cooking fat, allowing it to heat for 1 minute. Scoop a portion of the cabbage mixture into your hands, form a loose ball, and place it on the skillet. Flatten it with a spatula until thin. Fry each fritter for approximately 3 minutes per side until crisp and golden. Repeat with the remaining mixture, adding more oil as needed. Serve warm or at room temperature.

Notes

Baking Option:
Preheat the oven to 420°F (215°C) and line a baking sheet with greased parchment paper. Arrange the cabbage mixture in small mounds on the tray and flatten slightly. Bake for 20–23 minutes, flipping the fritters halfway through. For an extra-crispy finish, broil for the final minute.
Tips for Best Results:
The mixture may release some liquid as it sits. Stir any remaining liquid back into the batter before frying, as it aids in binding. To speed up the process, consider using two skillets simultaneously.
Flour Choices:
Any flour works well here; you may use gluten-free, cassava, almond, or arrowroot flour. For best results, opt for a starchy, finely textured flour.
Cheese Variations:
For additional flavor, incorporate ½ to ¾ cup of grated feta, Parmesan, or cheddar, or use a dairy-free alternative.
