These irresistible bacon-wrapped smokies coated in brown sugar are a perfect appetizer for any gathering. They’re simple to prepare, can be made in advance, and are freezer-friendly for added convenience.
Preheat the oven to 425°F and line a baking sheet with aluminum foil.
Cut the bacon strips into thirds. Wrap each mini smokie with a piece of bacon, securing it with a toothpick.
In a bowl, mix the brown sugar and cayenne pepper thoroughly. Roll each bacon-wrapped smokie in the sugar mixture until evenly coated. (At this stage, the smokies can be frozen if desired.)
Arrange the smokies on the prepared baking sheet, ensuring they are spaced apart. Bake for 10 minutes.
Turn the smokies over and bake for another 10 minutes, or until the bacon is crisp. If baking from frozen, add an additional 5 minutes to the cooking time.

Avoid combining the brown sugar and smokies directly on the foil-lined pan, as excess sugar can burn during baking. Ensure the sugar is rubbed onto the smokies before placing them on the pan.
