Ingredients

  • 14 ounces mini smokies 1 package
  • 1 pound bacon 1 package
  • ½ cup brown sugar
  • ¼ teaspoon cayenne pepper adjust to taste

Instructions

  • Preheat the oven to 425°F and line a baking sheet with aluminum foil.
  • Cut the bacon strips into thirds. Wrap each mini smokie with a piece of bacon, securing it with a toothpick.
  • In a bowl, mix the brown sugar and cayenne pepper thoroughly. Roll each bacon-wrapped smokie in the sugar mixture until evenly coated. (At this stage, the smokies can be frozen if desired.)
  • Arrange the smokies on the prepared baking sheet, ensuring they are spaced apart. Bake for 10 minutes.
  • Turn the smokies over and bake for another 10 minutes, or until the bacon is crisp. If baking from frozen, add an additional 5 minutes to the cooking time.

Notes

Avoid combining the brown sugar and smokies directly on the foil-lined pan, as excess sugar can burn during baking. Ensure the sugar is rubbed onto the smokies before placing them on the pan.
