Ingredients

  • 1/3 cup firmly packed light brown sugar
  • 4 garlic cloves finely chopped
  • 1 teaspoon blended Italian-style dried herbs
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon fine sea salt
  • 4 chicken breasts boneless and without skin (approx. 1½ pounds)
  • 2 tablespoons extra virgin olive oil or unsalted butter
  • 1 tablespoon soy sauce low sodium if preferred
  • Optional: freshly chopped parsley or sliced green onions for garnish

Instructions

  • Preheat the oven to 375°F (190°C). Lightly coat a baking dish with cooking spray or line it with parchment paper for easy cleanup.
  • In a wide skillet set over medium heat, warm the olive oil. Place the chicken breasts in the pan and cook each side for about 2 to 3 minutes, or until a light golden crust forms. Set aside off the heat.
  • Lower the heat under the skillet and, if necessary, add a small drizzle of oil. Stir in the minced garlic and cook for 30 seconds until it becomes aromatic. Mix in the brown sugar, soy sauce, Italian herbs, salt, and black pepper. Let the mixture simmer gently for 1 to 2 minutes until it becomes a smooth, glossy glaze.
  • Transfer the seared chicken into the prepared baking dish. Evenly spoon the garlic and brown sugar sauce over the chicken to coat thoroughly.
  • Place the dish uncovered into the oven and bake for 25 to 30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). Halfway through baking, spoon some of the pan sauce over the chicken to intensify the flavor.
  • Once baked, allow the chicken to rest for 5 minutes. Finish with a sprinkle of chopped parsley or green onions if desired. Serve warm alongside your choice of sides such as steamed rice, mashed potatoes, or oven-roasted vegetables.
