A delectable addition to your dinner rotation, this Taco Doritos Casserole features layers of seasoned ground beef, sweet corn, cheese, and crushed Dorito chips, all baked to perfection. Garnish with your favorite toppings for a complete meal!
Preheat the oven to 350°F and coat a 9×13-inch baking dish with nonstick spray.
Gently crush the Dorito chips; set aside. Reserve 2 cups crushed finely (similar to breadcrumbs) and 1 cup loosely crushed for topping.
In a large skillet, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess grease.
Add minced garlic to the skillet and sauté for one minute. Stir in the taco seasoning, frozen corn, diced tomatoes with green chilies, and the finely crushed Doritos. If using black beans, add them at this stage.
Remove the skillet from heat and mix in sour cream and 2 cups of the Mexican blend cheese until combined.
Transfer the mixture to the prepared baking dish and bake for 5 minutes, just until heated through.
Sprinkle the remaining 1 cup of cheese over the casserole, followed by the loosely crushed Doritos. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted.
Remove from the oven and serve immediately. Garnish with your preferred toppings for extra flavor and texture.
