Ingredients

For the Salmon:

  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • 1 pound fresh salmon filet
  • ¼ teaspoon pepper

For the Patties:

  • ½ cup dry bread crumbs
  • 1 teaspoon garlic minced
  • 2 large eggs room temperature
  • ¼ cup yellow onion chopped
  • 1 teaspoon Old Bay seasoning
  • ½ teaspoon kosher salt
  • 1 tablespoon olive oil
  • Lemon wedges for garnish optional
  • Tartar sauce for serving

Instructions

Prepare the Salmon:

  • Preheat your oven to 400˚F and line a baking sheet with parchment paper.
  • Place the salmon filet on the prepared baking sheet with the skin side down. Drizzle with olive oil and season with salt and pepper.
  • Bake for 15-20 minutes, or until the salmon flakes easily with a fork. Ensure the internal temperature reaches 145°F for doneness. Remove from the oven and allow to cool until safe to handle.
  • Once cool, flake the salmon using two forks and transfer it to a large mixing bowl, discarding the skin and any bones.

Prepare the Patties:

  • Add the eggs, minced garlic, chopped onion, bread crumbs, Old Bay seasoning, and kosher salt to the bowl with the flaked salmon. Mix thoroughly to combine all ingredients.
  • Shape the mixture into 8 patties, approximately 2 inches in diameter and ½-inch thick.
  • Heat olive oil in a large skillet over medium heat. Place the patties in the skillet in a single layer. Work in batches if necessary to avoid overcrowding.
  • Cook each side of the patties for 3-5 minutes, or until golden brown and heated through.
  • Transfer the cooked patties to a plate lined with paper towels to drain any excess oil.

Serve:

  • Serve the patties warm with optional garnishes like freshly squeezed lemon juice and tartar sauce.

Notes

These patties pair wonderfully with a crisp green salad or roasted vegetables for a complete meal. Adjust seasoning as desired for personal taste preferences.
