Ingredients

  • 1 pound of baby potatoes sliced in half or quartered if extra large
  • 3 tablespoons of extra-virgin olive oil
  • 1 pound of smoked sausage beef or pork, cut into round slices
  • 12 ounces of green beans ends trimmed
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried parsley flakes
  • 1 teaspoon of smoked paprika
  • Sea salt and freshly ground black pepper adjusted to taste
  • ¼ teaspoon of crushed red pepper flakes optional, for spice
  • Optional toppings: minced fresh parsley or grated Parmesan cheese

Instructions

  • Preheat the oven to 400°F (200°C). Prepare a large rimmed baking sheet by lining it with parchment paper or aluminum foil for simpler cleanup.
  • In a spacious mixing bowl, combine the halved or quartered baby potatoes, trimmed green beans, and sliced sausage. Drizzle with olive oil and season with garlic powder, onion powder, smoked paprika, dried parsley, salt, pepper, and red pepper flakes if a bit of heat is desired. Toss well to coat all ingredients evenly.
  • Transfer the seasoned mixture to the prepared baking sheet, spreading everything out in an even, single layer to ensure balanced roasting.
  • Place the tray in the preheated oven and bake for 30 to 35 minutes. About halfway through, turn the sausage and vegetables to promote even browning. Roast until the potatoes are fork-tender and golden, and the green beans have slight crisp edges.
  • Remove from the oven and serve immediately. Garnish with freshly chopped parsley or a sprinkle of Parmesan if preferred.

Notes

For best texture, avoid overcrowding the pan—use two trays if necessary to maintain a single layer.
