Ingredients

  • 1 cup yogurt dairy or plant-based; whole milk plain yogurt is preferred
  • 1 teaspoon vanilla extract
  • 1 cup milk any variety, such as oat milk, dairy, or plant-based alternatives
  • 12 –16 oz strawberries fresh and chopped or frozen and thawed; substitute with other fruits if desired
  • 1/4 cup maple syrup or honey use maple syrup for a vegan option
  • 1/2 cup chia seeds
  • Optional toppings: fresh strawberries other fruits, or whipped cream

Instructions

  • In a medium bowl, combine the strawberries, milk, yogurt, vanilla extract, and maple syrup. Use an immersion blender to blend the mixture until smooth. Alternatively, you can blend the ingredients in a standing blender and transfer the mixture to a bowl.
  • Stir in the chia seeds thoroughly to ensure even distribution.
  • Cover and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and thicken into a pudding-like texture.
  • Serve chilled, topped with fresh strawberries, additional fruit, or whipped cream, if desired.

  • Fruit Variations: Mango, mixed berries, or other fruits can be substituted or combined for unique flavors.
  • Vegan/Dairy-Free Option: Use plant-based milk and yogurt, and sweeten with maple syrup instead of honey.
  • Paleo/Whole30-Friendly: Choose compliant yogurt and milk, such as almond milk, for these dietary needs.
  • Gelling Tips: Older chia seeds may require additional time to gel. If the pudding doesn’t thicken sufficiently after four hours, leave it to chill longer or overnight. For an extra-thick consistency, reduce the milk and yogurt by 1/4 cup each.
