Ingredients

For the Cake

  • 1 1/2 cups all-purpose flour use gluten-free, if required
  • 3/4 cup granulated white sugar *refer to notes
  • 1/4 cup light brown sugar *refer to notes
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 5 tablespoons vegetable oil or canola oil or refined coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar white or apple cider vinegar
  • 1 cup water

For the Spiced Cream Cheese Frosting

  • 8 ounces cream cheese dairy-free or standard
  • 1/2 cup butter dairy-free or standard, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 4 cups powdered sugar

Instructions

  • Preheat your oven to 180°C (350°F). Lightly grease an 8-inch cake pan with cooking spray and set it aside.
  • In a large mixing bowl, combine the flour, white sugar, brown sugar, baking soda, salt, cinnamon, nutmeg, cloves, and allspice. Mix well until all dry ingredients are evenly distributed.
  • Add the oil, vanilla extract, vinegar, and water to the dry mixture. Stir until a smooth batter forms.
  • Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool completely in the pan before applying the frosting.

To Prepare the Frosting

  • In a separate bowl, beat the cream cheese and softened butter together until smooth and creamy.
  • Add the vanilla extract and continue to beat until well incorporated.
  • Gradually add the powdered sugar, cinnamon, nutmeg, and cloves while mixing on low speed. Continue beating until the frosting is light and fluffy.
  • Spread the frosting evenly over the cooled cake.

Notes

You can substitute all white sugar or all brown sugar in the cake. Using all brown sugar will result in a darker cake. Sugar-free alternatives can also be used.
The quantities listed will make a single-layer cake. To create a layered cake, simply triple the ingredients.
Storage: If consumed within 3 days, the cake can be kept at room temperature, covered. For longer storage, refrigerate it for up to 2 weeks.
Freezing: Store cake slices in a shallow container and freeze for up to 6 months.
