Ingredients

  • 1/3 cup milk
  • 1 box yellow cake mix
  • 2 boxes 17 ounces total Jiffy cornbread mix
  • 5 tablespoons butter melted
  • 4 eggs
  • 1 cup water

Instructions

  • In a large mixing bowl, combine the yellow cake mix and the Jiffy cornbread mix thoroughly.
  • Incorporate the milk, melted butter, eggs, and water into the dry mixture, stirring until the batter reaches a thick, smooth consistency.
  • Transfer the batter into a greased 9×13 inch baking pan or divide it evenly into a lined muffin tin.
  • Bake in a preheated oven at 325°F (163°C) for approximately 40 minutes or until a toothpick inserted in the center comes out clean. If using a muffin tin, reduce the baking time to 18-20 minutes or until the muffins are golden brown.

Notes

For a more cake-like cornbread, use just 1 box of Jiffy cornbread mix and bake at 350°F (177°C) for about 25 minutes, or until a toothpick inserted in the center emerges clean.
